This honey is made of the flowers from the pyrenean piedmont. It is produced after the acacia bloom of mid spring and until the transhumance to higher altitudes in June.
Linden, chestnuts, Rubus like raspberry or blackberry or even holly have their pollen gathered by our bees at this period.
The colour ranges from a amber to dark yellow when it crystallises. Its taste is very well balanced between wooden notes, floral ones and some light mint.
